It will not be possible to move a camera with the same level of precision when its small nub-like joystick is manually pushed by a person. Especially punctilious gigapixel-style shooters would want to mount the camera and lens so as to center it at the no parallax point (A.K.A. nodal point) of the lens. That would involve positioning it so far backward that it may not balance on the gimbal without significant additional counterweights added in front of the camera. Having said that, if you will use a short lens and overlap your images by a significant amount (and if you do not mind that the tilt will by necessity have to move the camera in an arc) then you may indeed find that you are able to take multiple shots and combine them to make a composite photograph at an especially high resolution.
