The older LGs have settings for sRGB, AdobeRGB and DCI-P3 "emulation" (They do about 92% DCI-P3). So I could set those to DCI-P3, but most of my applications assume sRGB (as do 99.9% of all Windows applications)? If I calibrate with my X-Rite i1Display Pro set to sRGB will I get good sRGB color? Why does it list the sRGB coverage if it can't be set to sRGB? X-Rite i1Display Pro

It can always display all the color it is capable of. A colorimeter can be used to create custom profiles based on your needs, but this is not found in the screen's settings.
