Q: 1. What is the purpose of the pins? Why should I get this plate for my Canon 7D instead of a cheaper plate without the pins?

A: The pin, there is only one, simply assists to help place the plate accurately on the base of a camera i.e. parallel to the body. The plate actually has more holes for the pin, i.e. fits more cameras, than the diagram reveals but should suit your Canon just fine (though, caution, I use Nikon). However, it's not essential to use it and, at least in my case, the pin came separated from the plate. So, fit it or not. My reason for choosing this plate versus the other is its length. I want stability, so the more length the better, in my view. Aesthetically, on the Nikon, it sits/looks better too, than the square version does, but hardly a reason to drive a purchase decision, As for price, it's just a few dollars more, they are very close. I guess you pay for the extra length.

A: It's the same tripod head, except for the release clamp. The Monoball Quick fix version only accepts Arca's monoball quick fix plates. The other models accept the larger, standard Arca Swiss plates. If you're ok using the quick fix plates, or you intend to replace the release clamp for something like a Really Right Stuff lever release or screw clamp, then it is a much better value for essentially the same head.

A: Yes, the Arca-Swiss d4 Tripod Head with MonoballFix Quick Release (Geared) with its 75 lb load capacity can definitely securely support the Canon EOS R5 Mirrorless Camera with the Canon RF 600mm f/4 L IS USM Lens. Keep in mind this only uses Arca MonoballFix-Type plates. If you want to use standard Arca-type plates select a version with a version with the FlipLock Lever or the Classic Knob.
