The printable side will have a finer even texture than the back which will have a slightly more coarse texture with a faint screen pattern. Also the printable side is slightly whiter that the back. One can gauge this whiteness by laying another piece of velvet paper on and comparing.

It's simple, always use the single sheet method that you use with the larger sheets. It's my favorite paper, just made some large prints, over 108 using velvet.
